If you are anything like me, no matter how amazing the meal you planned earlier in the week is, after a long day at work all you want is something quick and simple. These taco salads are amazing. It looks like you put a lot of work into a meal and it is pretty balanced and healthy. You can also prep everything ahead of time and have the ingredients ready. The tortilla bowls are, of course, totally optional, but they are super fun.
Tortilla bowl:
What you will need:
Tortillas
Muffin tin
What you do:
Preheat oven to 375 degrees
Flip the muffin tin over
Place 1 tortilla in the middle of 4 of the muffin cups (click here for better picture)
Make as many as you need/want/can per muffin tin (mine is a 12 cup muffin tin, so I can make 4 tortilla bowls at once)
Bake for 10-15 mins or until the tortilla browns slightly
These bowls are great for salad, but also for dips at parties, etc.
Filling ideas:
Chicken strips
Grilled onions and peppers
Avocado or guacamole
Tomatoes
Lettuce
Cheese
