Bacon Makes the World Go 'Round

You might be surprised to find out that I didn't eat bacon until about a year ago.  Chris, being quite the meat eater himself, has made it a personal mission to have me try different kinds of meat to see if I like them.  So far, bacon has been the only winner, but it has definitely been that.  Since he got me hooked, I've been looking for interesting and fun recipes involving bacon.  I tried bacon brownies (recipe here), and now I've moved onto pancakes.  These bacon pancakes make every tastebud on your tongue tingle.  I used Martha Stewart's recipe for the pancakes which you can find here. Once the batter is ready, cook the bacon in a pan.  Cook fully on one side, and cook almost fully on the other. Put some batter down in a skillet over medium heat make the pancake long like in the picture instead of round.  Put the bacon strip (fully cooked side down) on top of the batter.  When the batter bubbles and changes colors on the side flip the pancake and cook the other side.  Make sure you are only flipping once or else your pancakes will be thin and flat.  Keep pancakes on plate in low hea (200 degrees) oven until you are finished in order to keep them warm.  Serve with a little maple syrup! They are a quick and easy option for a hung over or lazy weekend morning.  ENJOY (I know I did)!!
